Black-Eyed Pea Soup Recipe

Step 1: Gather Your Ingredients
- 1 onion, diced
- 1 stalk celery, sliced
- 1 green pepper, diced
- 1 tablespoon olive oil
- 2 minced garlic cloves
- 1 teaspoon oregano
- 1 teaspoon thyme
- salt and pepper, to taste
- 4 cups vegetable broth
- 1 can diced tomatoes, drained
- 4-5 cups green cabbage, chopped
- 1 (15-ounce) can black-eyed peas, rinsed and drained
Step 2:
- In a stockpot, saute onion, celery, and green pepper in olive oil for about 5 minutes.
- Then, stir in garlic, oregano, crushed red pepper, and thyme.
Step 3:
- Add vegetable broth, diced tomatoes, and ketchup. Season with salt and pepper.
- Bring to a boil. Stir in chopped cabbage. Reduce heat and simmer, stirring occasionally for 10-15 minutes.
Step 4:
- Stir in black-eyed peas and cook 5 minutes
- Serve with cornbread, and enjoy!
