Black-Eyed Pea Soup Recipe

Step 1: Gather Your Ingredients

  • 1 onion, diced
  • 1 stalk celery, sliced
  • 1 green pepper, diced
  • 1 tablespoon olive oil
  • 2 minced garlic cloves
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • salt and pepper, to taste
  • 4 cups vegetable broth
  • 1 can diced tomatoes, drained
  • 4-5 cups green cabbage, chopped
  • 1 (15-ounce) can black-eyed peas, rinsed and drained

Step 2:

  • In a stockpot, saute onion, celery, and green pepper in olive oil for about 5 minutes.
  • Then, stir in garlic, oregano, crushed red pepper, and thyme.

Step 3:

  • Add vegetable broth, diced tomatoes, and ketchup. Season with salt and pepper.
  • Bring to a boil. Stir in chopped cabbage. Reduce heat and simmer, stirring occasionally for 10-15 minutes.

Step 4:

  • Stir in black-eyed peas and cook 5 minutes
  • Serve with cornbread, and enjoy!
